Heat lightly greased griddle on stove (it’s the right temp if a drop of water skitters on the surface)
Ingredients
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg, beaten
2 tbsp melted butter
1/2 banana
1/4 cup chopped pecans
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
Whisk egg and butter into “soured” milk.
Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Quarter 1/2 banana lengthways, and chop into dice (the riper the better –look for ‘brown sugar spots’ on the peel). Add to batter.
(Optional – toast pecans in toaster oven and add to batter.)
Scoop batter onto hot griddle and cook until bubbles appear, then flip.
In a perfect world, serve with Grandpa Grady’s syrup and a little melted butter, or buy pure maple syrup from store.
