Ingredients
2-5 filets of mild white fish - I mostly used catfish
1-2 cups of cornflakes well crushed
1-2 eggs
stick of butter
Directions
Beat eggs and pour into a wide shallow dish you can dip the filets in. Crush cornflakes well. I put them in a ziplock bag. A rolling pin works and so does squishing the bag in your hands. Pour the fine crumbs into another wide shallow dish- or use paper plates for minimal cleanup. This is messy.
Season fish with salt and pepper. Dip fish in egg. Make sure the fish has egg all over it - that's your glue. Let excess drip off, then press fish firmly into cornflakes. When well coated, place on a plate and chill in the fridge for up to 30 minutes. This helps the coating stick.
Heat the oven to 400. Put a roasting pan in the oven with the stick of butter in it. When the butter has melted and heated to a point of fragrance, pull out the pan. Quickly and carefully dip each filet in the hot butter, then flip it over (so both sides are buttered). Cook in the oven for 15 minutes or until fish flakes easily
