Combine
2 cups flour
1/3 cup sugar
1 tablespoon baking power, sifted
1/2 teaspoon salt
Add 6 Tablespoons cold unsalted butter, chopped up
Cut into the flour mixture with the side of a fork until the butter is the size of small peas.–TIP: use a box cheese grater and grate the butter on the big holes. Fast!
Add 1/2 cup chopped candied ginger
Wisk together
1 large egg
1/2 cup cream
Mix dry and wet ingredients quickly. Turn out on a floured board. Fold, quarter turn, and fold again up to nine times. Use a light touch and the minimal number of folds for a tender crumb.
Roll out 1⁄2 inch thick, spread 1/3 cup brown sugar over dough, sprinkle to taste with cinnamon (I’m guessing 1/2 to 1 tea- spoon). Roll up like a strudel into a cylinder. Use rolling pin to flatten to 3/4 inches thick.
I use my grandmother’s round biscuit cutter, though it isn’t traditional.
Place on a cookie sheet, brush with cream or egg yolk, sprinkle with cinnamon sugar mix.
Bake 12-16 minutes at 425. Best still warm, but pretty good all day. Divine with a vanilla latte.
