Ingredients
3 tablespoons olive oil
1 large onion chopped
1-3 cloves garlic chopped fine (according to your own taste).
1 pound of lean ground beef and 1/2 lb ground pork or fresh Italian sausage removed from casing, or 1 1/2 lbs. ground turkey.
4-6 cans of chopped tomatoes - bonus if at least two cans are fire roasted.
2 tablespoons of tomato paste
2 tablespoons each of fresh parsley and basil, chopped
1 tablespoon each of fresh sage, rosemary and thyme, chopped
salt, pepper,
pinch of sugar
dash of red pepper, nutmeg, ground allspice
Directions
Heat olive oil and gently sauté onions for 5 minutes or so. Add garlic and sauté another 2 minutes. Put in big pot. Add meat to sauté pan and cook until browned. Pour off fat and add meat to the big pot. Add tomatoes, and seasoning. Cook partially covered for one hour or more. Add fresh herbs.
