My good friend and a great cook
Ingredients
Beat 1 pound softened Irish Kerry Gold unsalted butter (find at Costco and Publix) until fluffy.
Slowly add 1 cup castor *extra fine* sugar (Whole Foods)
Add 2 teaspoons of vanilla
Add 18 ounces of flour (4 cups)
1/2 teaspoon of salt
Directions
Pat dough into a rectangle 1/2 inch thick – refrigerate 30 minutes.
Using a ruler’s width, cut up dough. Place squares (or rectangles) on parchment paper covered cookie sheet, and poke holes to the bottom of each cookie with a fork.
Preheat oven to 325 oven, turn down to 300.
Bake shortbread for 35 minutes, turning the pan once.
Look for a little bit of color around the edges.
