Ingredients
Smoked turkey carcass, plus left over turkey bits
Wild rice, brown rice or mixed rice
Celery

Season with salt, pepper and herbs: fresh or dried oregano, thyme, marjoram and rosemary
Directions
Smoke a turkey. Eat lots of it. Then boil the carcass (bones, wings, scraps etc) in water to cover plus one inch, and an onion stuck with a few cloves, a stalk of celery, and a carrot. Bring to a boil and then reduce to a simmer for a couple of hours, replenishing water if necessary, but expect it reduce by 1/3. If you don’t have much left over turkey, you can add some thigh or breast meat and leave it in until it’s just cooked, 15 or 20 minutes. Remove, cool and chop into bite-size pieces to add at the end.
Strain broth into a clean pot. Add 1 or 2 cups of sliced carrots, 1 or 2 cups of chopped onions and 1 or 2 cups of celery. The amount of vegetables depends on the amount of broth, so see what you think. Simmer for 20 minutes. Add rice and simmer another 30- 45 minutes. Add mushrooms and herbs the last 15 minutes. Add chopped up leftover smoked turkey or extra chicken at the end, and cook just enough to warm through.
